A Zambian Princess...it's true!

OK so I'm Zambian...my mom is the daughter of Chief Mwase in Lundazi, a village town in the Eastern Province of Zambian, right next to Malawi. That would make her a princess and as the only daughter, of the only daughter...that makes me one too!

See on the map below...the capital city of Lusaka is where I was born.

There will be some new photos coming when my brother Andrew and his wife and son return from a month travelling in Zambia with my mom.

A trip back in time



This is the first house I lived in Jamaica when I started working with THE COMPANY...it was fantastic!




We had some short and LOOONG stay guests who came to see Jamaica and experience Sunsplash...Ms. Marcia and Orla were the best house guests ever!


It had three bedrooms, a back deck, a pool and a HUUGE walk-in shower in the master bath. This is for all of you who wonder about the gorgeous accomodations you can find in JA.

Diabetic Blueberry Muffins

Ingredients:
1 c. all-purpose flour, sifted
1 1/2 tsp. baking powder
1/2 tsp. salt (optional)
1 1/2 tsp. or 2 pkgs. Equal
1/2 c. skim milk1 egg or 1/4 c. Egg Beater
2 1/2 tbsp. melted shortening
1/3 c. fresh or frozen blueberries

Direction: Preheat oven to 425 degrees. Spray muffin tins with non-stick vegetable spray. Sift together flour, baking powder, and salt. Beat Equal and egg together. Add milk and melted shortening. Stir into the flour mixture. Stir in blueberries until just mixed. Batter will be slightly lumpy. Divide into tins. Bake 20 to 25 minutes or until done.

How I lost 55 lbs!

Everyone keeps asking me how I lost sooo much weight in such a short time so I'm starting to show you all how.

Step ONE - section your plate...every time.
The photo here shows that almost HALF of your plate should be filled with vegetables. Cooked or raw, this is where you fill up your tummy for lunch or dinner and don't have to feel cheated in any way.
The rest of your plate is divided into 1/4 Carbs and 1/4 of Protein, a fruit and a glass of milk. Do not skip the fruit and dairy as they add to you feeling full and chemically help with keeping your sugar down. Try a smaller plate too... it works!

Step TWO - walk 45-60mins a day
Walk every day in the morning before it gets too hot so that your engines are fired up for the day of burning calories. Walking works for me. Take short strides, stretch before you go and wear a hat to cover up the sleepy head! Get a buddy to walk with you - you will always feel peer pressure to get up if there is someone meeting you on the road.

Sugar Free Chocolate Chip cookies!!!

Sugar Free Chocolate Chip Cookies

1/2 C. softened margarine
1 egg 1 t. vanilla
1/4 C. non-fat dry milk
1/2 C. sugar Twin
1/4 C. water 1 C. flour
1/2 t. baking soda
2 ounce dietetic choc candy - diced

Cream together margarine and Sugar Twin. Add egg, vanilla, non-fat dry milk and water. Beat 1 minute at medium speed. Fold in chocolate candy. Drop from teaspoon onto ungreased cookie sheet. Bake at 350° F. for 20-25 minutes.

31 calories per cookie.
