Banana Bread Recipe
When I was first diagnosed and all my lovely Aunties were asking me if there was "anything they could do?" I always offer up this recipe and ask them to bake me something! It's awesome...
Notes:
* Exchange 1 1/2 Cups of regular sugar for half that amount in Splenda baking sugar.
Ingredients
1/2 cup Shortening (I use butter)
1 1/2 cup Sugar
1/2 tsp Salt
2 Eggs
4 Mashed Bananas (medium/large)
1 1/2 tsp Baking Soda
1/2 cup Water
3 cup Flour
1 cup crushed nuts
Directions
Cream shortening, sugar and salt.
Add eggs and bananas.
Dissolve soda in water.
Add soda water and other ingredients into the batter.
Bake at 350F for 1 hour.
ONE 2" SLICE = 2 SLICES OF TOAST
Roadtrips with Diabetics...CAUTION!
I LOVE ROADTRIPS!!!
So I recently headed down to Sumfest for three days at the Dancehall, Reggae & RnB music festival. On the way down with two friends we stopped for the usual "gas up the car and grab some snacks" and I thought that with my Diabetes, I could handle some Diet Pepsi and a plantan chip packet.
HA - this habit of stopping on the road for snacks and stretching would end up crippling me for the Saturday night show and having me miss Mary J Blige...grrrrrr
Here is what happened....
Add the chips + pop but now you need to subtract the 4 bottles of water I would have had at that time of day if I weren't on the road...
then add the light beer and festival at Faith's Pen roadside stop
then add the vodka and Pepsi at the venue on Thursday night and you can see how the sugar started to tip over. Yes...they gave me a real 32 grams of sugar real PEPSI even when he said it was diet!!!!By Saturday night I was over 22 points and headed to a hospital if I didn't stop this runawy train from headed even higher.
So we started with the 2 gallons of water, rest, walking, an aqua exercise session in the pool...another 2 gallos of water, more rest, more walking and then...
Sunday morning we hit 15...woo woo!!! So to all of you Type II's here is a warning and a message.
Take food on the road with you...DON'T TRUST ROADSIDE SNACKS
If you can, bring your diet drink with you to the bar or (sad as it is,) call ahead to the bar and make sure what the bartender pours you in in FACT, a diet drink.
Vomitting instead of Mary J was sooo not cool.

What is a "TwinCousin" you ask?....
Just like "Leave It To Beaver..."
The laughing cherub I'm pointing at in the photo is my Uncle Jim when he was a young boy.
My older brother Johnny could tell us in 4 seconds how old he was in the photo...but he can't talk right now. He is sick in hospital in Zambia. Get well big brother xoxo
Standing behind him with the dark hair and knobby knees is my Dad...David. The blonde boy on the right is my Dad's twin, Charles.

A "Heritage" treasure found
I was going through the nearly 10 megs of photos on my mp3 player when I realized that this had become the dumping ground...the spare room....the digital attic. I have been stashing things on here "for safety" and realized that I need to purge, and bad.
You know when you realize there are things in your attic (or garage) that you haven't seen in a year but have been put there for it's own safety...this is the time to purge.
Here are some gems that survived the cutting room floor...
I was working for the sponsor of Reggae Sunsplash and needed to get artist "drops" to put in the radio ads for the concert. So I called June from the Sunsplash office and asked her to work with me on a list of artists coming into Kingston during the months preceding the show. We compiled a huge list of artists and began booking them one-by-one, getting some of the funniest and poignant moments I've had with artists in many years.
The band Morgan Heritage are incredibly talented, vocally skilled, songwriters who have been in the business all their lives. They are a family and 2nd generation at that! They do a super job of writing gorgeous lyrics with musical and vocal harmonies and mixes I really liked.
We met them at a local recording studio. There are photos of Bob Marley and all the other great artists everywhere. It is sparse but once you enter the actual studio and booth...it is deep, sound proof and full of history.

A Zambian Princess...it's true!
OK so I'm Zambian...my mom is the daughter of Chief Mwase in Lundazi, a village town in the Eastern Province of Zambian, right next to Malawi. That would make her a princess and as the only daughter, of the only daughter...that makes me one too!
See on the map below...the capital city of Lusaka is where I was born.
Thought I'd post some photos of my Mom's house and store so you can see where I'm REALLY FROM!
There will be some new photos coming when my brother Andrew and his wife and son return from a month travelling in Zambia with my mom.
Mom's store
Aunty Patricia working the shop!
Some shots of Mum's dream house she built in Lusaka!
For those of you who know my Mum, she can grow things ANYWHERE...here is proof.

A trip back in time
This is the first house I lived in Jamaica when I started working with THE COMPANY...it was fantastic!
We had some short and LOOONG stay guests who came to see Jamaica and experience Sunsplash...Ms. Marcia and Orla were the best house guests ever!
It had three bedrooms, a back deck, a pool and a HUUGE walk-in shower in the master bath. This is for all of you who wonder about the gorgeous accomodations you can find in JA.

How I lost 55 lbs!
Everyone keeps asking me how I lost sooo much weight in such a short time so I'm starting to show you all how.
Step ONE - section your plate...every time.
The photo here shows that almost HALF of your plate should be filled with vegetables. Cooked or raw, this is where you fill up your tummy for lunch or dinner and don't have to feel cheated in any way.
The rest of your plate is divided into 1/4 Carbs and 1/4 of Protein, a fruit and a glass of milk. Do not skip the fruit and dairy as they add to you feeling full and chemically help with keeping your sugar down. Try a smaller plate too... it works!
Step TWO - walk 45-60mins a day
Walk every day in the morning before it gets too hot so that your engines are fired up for the day of burning calories. Walking works for me. Take short strides, stretch before you go and wear a hat to cover up the sleepy head! Get a buddy to walk with you - you will always feel peer pressure to get up if there is someone meeting you on the road.

words of wisdom
"In the long run you hit only what you aim at.
Therefore, though you should fail immediately,
you had better aim at something high."
I admit it..I am a social entrepeneur!
What is a Social Entrepreneur?
Social entrepreneurs are individuals with innovative solutions to society’s most pressing social problems. They are ambitious and persistent, tackling major social issues and offering new ideas for wide-scale change.
Rather than leaving societal needs to the government or business sectors, social entrepreneurs find what is not working and solve the problem by changing the system, spreading the solution, and persuading entire societies to take new leaps.
Social entrepreneurs often seem to be possessed by their ideas, committing their lives to changing the direction of their field. They are both visionaries and ultimate realists, concerned with the practical implementation of their vision above all else.
Each social entrepreneur presents ideas that are user-friendly, understandable, ethical, and engage widespread support in order to maximize the number of local people that will stand up, seize their idea, and implement with it. In other words, every leading social entrepreneur is a mass recruiter of local changemakers—a role model proving that citizens who channel their passion into action can do almost anything.

Before & After shots
So my mentor, Joan Pierre drops into Jamaica to visit me while on holiday with her husband Tony and I have all of 20mins to see her at the Pegasus hotel...
Look at the weight you've put on, she declares!
So I worked my butt off and dropped another 15 lbs to get down to where I am now...
Phew...if you are Type II, listen to those who love you, they will tell you if you are tipping over the sugars.
"After" at Fashion Week
Miss Universe - a new role model?
Miss Universe....now if you know me, this would normally be an easy one to tell how I feel about. Things have changed a little now that I met this amazing woman! She is so tiny and positive in the face of all the world has challenged her to do...
You go girl...be a mom AND a role model....
Not everyone believes the most beautiful woman in the universe looks like "Barbie"?

Carribean Fashion Week - African inspired?
OK...I have never been a slave to fashion but this showing was something that has changed my mind completely.
To come to Jamaica and see high fashion and the beauty of the black models was amazing.
Too often in the "first world" we are forced to see 2nd and 3rd generation interpretations of what being an African is....and as a 2nd generation, born in Lusaka-Zambia African...I found this always a bit odd.
Watching the runways of Caribbean Fashion Week filled with the most gorgeous of Caribbean people, in their interpretations of African fashion and I applauded. Just the right touch of "homage" while staying true to where the clothes are made, makes these designs have integrity.
It is hot in Trinidat, but not the same kind of hot as Nigeria...the men are shaped differently and the seasons are different.
All of these differences make the Avark collection (shown here) one of the smartest, fashionable and wearable lines of African-inspired clothing I've seen in a long time. I hope to support them by buying a few pieces... check out my facebook for an album "the white collection", I call it and share them with strong black men you love.

Cricket moments - big ups to the crew!
Was digging through the ole hardrive getting ready to sort the photos into some rational sense of order and these came through as the highlights of the World Cup Cricket games in Kingston, Jamaica.
Here is my angel, Tina who worked with me on the hospitality and VIP protocol for all our guests during the games.
Count on Tina to be there with a special smile and no nonsense when things need to get done ASAP.
Couldn't have done it without you girl!
Happy Canada Day!
Happy Canada Day from JA!
Well my honey and a few friends held our first "I am Canadian BBQ" at our pool side with a BBQ of burgers, hotdogs and veggie stuff for about 25 of our work friends...it was great.
Fantastic music set by the pool and good vibes were had by all...I will be posting new photos later today once they are uploaded.
Was so cool to see some fellow Canadians let their hair down rather than visit the Canadian Embassadors house (accross the street) for the "all-inclusive, bashment of good taste & endless brews"...plu
s we had HIP HOP Y'ALL!!

Update from the front
I apologize for the long-winded email but this is the best time I have for the next week or so to sit down and really explain what I've been up to even in the past month! I'm trying to get a blog site set up where I can send you to see the photos of what we have been visiting and seeing for the past few months.
My sugars are hopefully finished with their roller coaster ride and now that I’m on meds, the balance is back. I walk/run 45mins every morning with a friend who lives up the street and I test once/day before dinner. It’s a battle but I’ve kicked smoking but assure you anytime alcohol or caffeine enters my system, I’m weak so…THANK GOD FOR NICODERM CQ!
Last few weeks: Well I've been to Barbados in the past few weeks, up to the north coast, figuring out my next move and handling some bad sugar days that have been pretty severe...all in all, I am OK and planning some new and exciting adventures. Biggest worry has been about my puppy, Cody, the house and making sure I can get enough money to cover the property taxes. That and getting a new tenant is a big part of my day as I launch the sponsorship model I created across the Caribbean.
2 weekends ago – went to stay at a lovely family-style condo in Ocho Rios where we swam in the pool and went on an excursion to see “Laughing Waters”, which is where they filmed Dr. No…the beach scene? Oh yes darling, we have photos and they will come as soon as I can get them off Greg’s computer tonight! It was so lovely…a friend was getting married on the beach so we went to see the set up and I played in a waterfall! See the photo gallery for those great shots taken by Greg,
Things are settling down in a good pace and our plans for the future are solid. Needless to say, he has moved to Jamaica and we will be spending visiting time in Canada...he needs to come home at least every 6 wks to see his son Tavaris and daughter, Donna so there will still be lots of travelling back and forth to come. It is so nice to have a partner during all of this upheaval and in order for me to stay healthy it has meant re-learning how to ask for help. I hear your jaw dropping, but it’s true, I ask now!
Work - As I mentioned above, I went to Barbados to present the Corporate Social Responsibility departmental model I've been building in Jamaica to the Marketing and Communications teams from across the region. It was amazing! Validating in that, for the past 5 years or so I realized that I'm a social entrepreneur and need to have some balance to the capitalistic efforts I do and need to recommend for the company in order to meet their bottom line. But allowing now a dialogue of how can these activities improve your social and philanthropic image in the community.... and actually affect change? That is so fulfilling...I'm working very closely now with Marketing departments in Barbados, St. Kitts, Panama, Antigua & Barbuda, Trinidad, Dominica and Cayman...just to name a few. I've set up an online application process that ties to a back end database for PR to tap into for stories, photos, an event calendar and virtual file sharing for the company...phew!
World Cup Cricket – Undoubtedly the largest event I have ever worked on. Global exposure that I’d love to get involved in more organizing eventually. As of right now, my CV includes work with the NBA MVP, Steve Nash, Multi-Platinum winning Alicia Keys, FIFA World Cup 2006, World Cup Cricket 2007 and now Caribbean Fashion Week…it’s a lot but Cricket was my largest budget (in excess of 3 million dollars US!) and we made an impact.
Very few companies were able to confirm they received ROI (return on their investment) and we have even managed to create a legacy program in the country by creating and paying for updated road signage across the island. Now when I need to figure out which roundabout exit goes to Greg’s mom’s house in Mandeville, I get my information from Highways signs that I PAID FOR!!
I only nearly got sued once and that was because I bartered with a small school across from Sabina Park to put our brand logo on their roof in return for 3 years of free Internet service, 2 computers and free e-learning classes for all their teachers. Here is the joke…the school roof is right in the sight line of all the world’s camera’s for Cricket LOL! So the ICC (owners of the game) lawyers on my case at 3am in the morning before the first match in Jamaica to take the sign down…my lawyers said “make us” and they did nothing because they had no grounds to even demand it’s removal.
There is nothing in my contract that says I can’t brand outside the Red Zone and just because you put your cameras there…it’s not my fault. So the game was slightly delayed because the ICC had to pay a crew to come in and MOVE the signage that was painted on the pitch…why? Because they moved the entire TV media entourage 10 feet to left to avoid my logo on the roof across the street!!! We made every paper for pushing the edge of a horrible contract that left most Caribbean countries broke with unsupportable infrastructure, stadiums and huge losses from no tourists showing up.
Blame the CariComm VISA, which required regular tourists to get a passport prior to arriving, and that India and Pakistan were ousted in the first round of matches and instantly you can calculate a loss of at least 20,000 visitors/day. So the file is closed and I got kudos’ from the entire region on our “audacity”…. Love it!
Looking forward to taking your bookings for the condo in Ocho Rios so you can come join us as well. (It’s really affordable and comes with a housekeeper/chef who does all your meals.)

Looking forward to taking your bookings for the condo in Ocho Rios so you can come join us as well. (It’s really affordable and comes with a housekeeper/chef who does all your meals.)
